Flatfish whit while and a plain.  sweet flavor with a chewy texture.  They are used as a high quality ingredient for making raw dishes, and exported as produet of superior quality that is thoroughly controlled. They are exported mostly in large quantities as live halibut, and also frozen, fresh, and refrigerated products.
