- If Glycyrrhizinic acid, which is the main element of licorice, is contained more than 50% in a product, that product is called a refined licorice extract.
- If it is contained less than 50%, the product is called a manufactured licorice extract.
- All licorice extract products have glycyrrhizinic acid's sweetening effect(a pure glycyrrhizinic acid is 200 times sweeter than sugar) and taste-purifying effect and thus they are used widely in such products as sauces, seasoned foods, confections and drinks.
