Broken rice is fragments of rice grains, broken in the field, during drying, during transport, or during milling. As the name suggests, broken rice is rice that has been "broken" or fractured during the milling process. Broken grains are separated from whole grains and sold as “broken rice” divided as 5% 10% 25%.
