The genus Capsicum comprises all the varied forms of fleshy-fruited chili peppers grown as herbaceous annuals--the red, green, and yellow chili peppers rich in vitamins A and C that are used in seasoning and as a vegetable food. The mild bell or sweet peppers (Grossum) have larger, variously colored but generally bell-shaped, furrowed, puffy fruits that are used in salads and in cooked dishes. It contains capsaicin, capsicidins, capsanthin, fatty oil, essential oil (volatile oil), solasodine, solanidine, solanine and considerable amount of vitamin C. It is very high in potassium and high in magnesium and iron. Its high vitamin C content can also substantially increase the uptake of non-heme iron from other ingredients in a meal, such as beans and grains. It disperses coldness, helps appetite and digestion, dries dampness, induces perspiration. It is sold worldwide fresh, dried, powdered as a flavoring and used to make a variety of sauces.
