Why does oil degrade during frying 

The crumbs and particles left over during subsequent fry cycles easily contaminate the oil. Impurities such as water, spices, breading powder and chicken blood etc speeds up the oxidation and degradation of oil, decreasing its pH value (make it more acidic). This actually degrades food quality and reduces the usable life of shortening.

How does oil degrade 

Oil degradation dynamics: Oxidation takes place with the presence of catalysts, which are the tiny particles and impurities in the oil. By filtering oil regularly, we can effectively remove the catalyst, hinder the degradation process and thus prolong the life of oil.
