The EMULIX™ series are one of the emulsifying salts, a mixture of phosphates, for cheese of which flavor, texture, body and color can be improved by making dispersion of ingredients in the cheese such as protein, fat and oil, moisture and so forth. This improvement comes from the ion exchange capacity, creaming effect and adjusted pH of EMULIX™ series on the manufacture of cheese.
