Kanpunggi Sauce is a specially crafted sauce for making the Korean-style Chinese dish “Kanpunggi,” where crispy fried chicken, coated in starch, is stir-fried with a spicy base of chili oil, minced garlic, and ginger, along with assorted vegetables. It delivers a unique balance of sweet, savory, and mildly spicy flavors from soy sauce, sugar, chili, and pepper. For deeper flavor, doubanjiang can be added according to the recipe. While the cooking method is similar to tangsuyuk (sweet and sour pork), this sauce reduces the sourness of vinegar and enhances the aromatic richness of chili oil.
